Sajta de Pollo (traditional chicken stew)
Ingredients:  
 
1 medium chicken (1,1/2 kilos)
3 onions
1/2 cup hot yellow chili
1 garlic clove
1/2 cup peeled sweet peas
2 tablespoons oil
1 tablespoon sugar
salt, pepper, ground cumin (amount desired)
8 large potatoes
2 tomatoes
Preparation:  1.- Cut the chicken in 8 pieces and wash well.
2.- Heat oil in a pot and brown the onion finely chopped. When they become transparent. Blend the chili in blender with a little water and add to the pot with the chopped garlic.
3.- Add sweet peas and cook. At this point, there should be a creamy light sauce cooking in the pot.
4.- Place chicken pieces in the pot and add 2 cups of water. Cook until tender.
5.- Last, add the teaspoon of sugar.

Comments:  You can serve this meal with Chuño Phuti (check recipe), or cooked tunta (cooked white chuño), white potatoes (cooked peeled potatoes), and a salad made of finely sliced onions and tomatoes.
