Locoto Relleno (Stuffed Andean Hot Chili) | Ingredients: | |      | 1 tomato |   | 2 tablespoons paprika, or hot chili powder | |      | 1/2 teaspoon ground pepper |   | 1/8 teaspoon ground cumin | |      | 250 grs. grated muzzarela cheese |   | salt | |      | oil |   | 12 large locotos (hot Andean chilies) | |      | 400 grs. ground beef |   | 2 medium onions |

Preparation: |
1.- Cut the top part of locotos and remove seeds. 2.- Place them in a bowl with water. Change the water of the bowl six times during the entire day. 3.- Place a pot with water and a little salt, and bring it to boil. Add locotos and cook them until they are tender. 4.- Chop onions and tomatoes. Heat some oil in a pan and stir-fry the onions for a while. Add the meat, pepper, cumin, and salt, and continue cooking. When the meat is browned, add tomatoes and paprika (or hot chili powder). Simmer for another 10 minutes. Turn the heat off. 5.- Stuff the locotos with the meat mixture. Cover with mozzarella cheese and place them in an oven tray. Take tray into the oven and broil the cheese. |
