Huminta a la Olla (Sweet Corn Apettizer) | Ingredients: |      | 4 cups fresh corn |   | 1 cup lard |      | 1 cup boiling water |   | 1 tablespoon salt |      | 2 tablespoons sugar |   | 5 pieces small fresh cheese |      | 1 teaspoon anise seeds |   | fresh corn husks |      | cinnamon (optional) |   |

Preparation: |
1.- Grind in a mill the 4 cups of corn. Melt lard and add to corn. Add also sugar, salt, and mix. 2.- Add anise seeds and ground cinnamon (if desired). 3.- Take 2 corn husks and place them on a flat surface(one overlapping the other). Place in center 1 or 2 spoonfuls of the filling with 1 slice of fresh cheese. Fold first the upper side, then the bottom side, and finally the other two. Wrap them nicely and tie with a string made of corn husks. Repeat the procedure with the remaining ingredients. 4.- Arrange two rows of corn cobs without the kernels on bottom of a large pot. Cover with a row of husks and add boiling water just enough to cover the husks. Place humintas on top, cover with a layer of corn husks and arrange another layer of humintas on top. Simmer for approximately 45 minutes. If you are not sure about the cooking time, place a potato in the pot along with the humintas. When the potato is done, the humintas are also done. |
