Huminta a la Olla (Spicy Corn Appetizer) | Ingredients: |      | 4 cups fresh corn |   | 1/4 cup hot chili powder |      | 1 cup lard |   | 1 cup boiling water |      | 1 tablespoon salt |   | 2 tablespoons sugar |      | 5 fresh cheese balls |   | 1 teaspoon anise seeds |      | fresh corn husks (enough for 8 humintas) |   | ground cinnamon (amount desired) |

Preparation: |
1. Grind the corn in a food mill. Place the cup of boiling water with the hot chili powder. Cook until the water evaporates, then add the lard and cook for another 5 minutes. Once the chili begins to boil remove from heat and add it to corn. Add sugar and salt and mix thoroughly. 2. Add anise seeds and cinnamon (if desired). 3. Take two corn husks (one overlapping the other). Place 1 or 2 tablespoons of filling and 1 piece of cheese. Close the huminta, fold the sides. Tie with a string made of corn husks. Repeat the same procedure with the rest of ingredients. 4. Take a large pot and place two rows of corn cobs without the kernels. Cover with the corn husks and add boiling water just enough to cover corn cobs. Place a layer of humintas, cover with corn husks and cook for approximately 45 minutes. If you are not sure about the cooking time, place 1 potato in the pot. Once the potato is done, the humintas will be also done. |
