Crepe Suzette | Ingredients: | |      | 125 grs. flour |   | 1 pinch salt | |      | 1 egg |   | 500 cc. milk | |      | 2 oranges |   | 1 teaspoon lemon juice | |      | 50 grs. butter |   | 50 grs. sugar | |      | 2 tablespoons Grand Marnier, or other orange liquor |   | Rind of 1/2 orange |

Preparation: |
1. Beat in blender the flour, egg, milk, and salt. Let it stand 30 minutes. 2. Spread butter in a non stick pan. Pour batter enough to make a thin crepe. Turn crepe to cook the other side. Follow the same procedure until finishing all batter. 3. Put crepes on a dish and keep them warm. 4. Melt butter in a deep pan. Add sugar and stir constantly until a golden syrup is formed. Add orange and lemon juices. 6. Chop finely the orange rind and to pan. Cook 5 minutes. 7. Remove orange rind and set it aside. 8. Turn off the heat. Brush abundantly each crepe with the syrup. 9. Fold crepes and place them in a serving dish. 10. Flambe the remaining salsa with the liquor until the alcohol evaporates. Pour salsa over the crepes. 11. Garnish with orange rind cut in fine strips. |
