Apple-Walnut Salad | Ingredients: |      | 150 grs. endives or brussel chicory |   | 200 grs. golden apples |      | 350 grs. purple cabbagge |   | 40 grs. walnuts (peeled) |      | 1 handful chives |   | 1/2 lemon |      | 4 tablespoons olive oil |   | 1 tablespoon prepared mustard |      | salt |   | white ground pepper |

Preparation: |
1. Slice purple cabbage thinly. Rinse and place in boiling water for 2 minutes. Drain. 2. Rinse and chop endives or chicory. 3. Peel, core and dice apples. 4. In a bowl, mix mustard, lemon juice, salt and pepper. 5. Arrange purple cabbage in center of dish with endives and apple. 6. Sprinle with prepared vinaigrette, garnish with chopped chives and crushed nuts. Add more oil if desired. |
