 Pineapple Upsidedown Cake
     1 1/4 cups flour  1 cup sugar
     1/2 teaspoon salt  2 teaspoon baking powder
     3/4 cup milk  1/3 cup shortening or margarine or oil
     2 Eggs  1 teaspoon vanilla
     1/4 cup butter or margarine  1/2 cup brown sugar
     1 can 8 oz. pineapple (sliced and drained)  8  Maraschino cherries
Pineapple Upsidedown Cake
Heat oven to 350 F. Melt 1/4 butter in a 8x8x2 inches baking pan. Sprinkle brown sugar over butter or margarine. Place pineapple slices in pan arranging it side by side; place cherries in center or curves of pineapple.
In a large bowl beat the flour, sugar, salt, baking powder, milk, 1/3 shortening, eggs and vanilla; scraping sides constantly on low speed. Beat on high speed for about 3 more minutes. Pour over fruit in pan and bake for about 20 minutes or until wooden pick inserted in center comes out clean. Great dessert!
If using self rising flour omit salt and baking powder.
