Pineapple Upsidedown Cake | Ingredients: |      | 1 1/4 cups flour |   | 1 cup sugar |      | 1/2 teaspoon salt |   | 2 teaspoon baking powder |      | 3/4 cup milk |   | 1/3 cup shortening or margarine or oil |      | 2 Eggs |   | 1 teaspoon vanilla |      | 1/4 cup butter or margarine |   | 1/2 cup brown sugar |      | 1 can 8 oz. pineapple (sliced and drained) |   | 8 Maraschino cherries |

Preparation: |
Heat oven to 350 F. Melt 1/4 butter in a 8x8x2 inches baking pan. Sprinkle brown sugar over butter or margarine. Place pineapple slices in pan arranging it side by side; place cherries in center or curves of pineapple. In a large bowl beat the flour, sugar, salt, baking powder, milk, 1/3 shortening, eggs and vanilla; scraping sides constantly on low speed. Beat on high speed for about 3 more minutes. Pour over fruit in pan and bake for about 20 minutes or until wooden pick inserted in center comes out clean. Great dessert! |
