| Breaded Liver|
|     ||400 grs. liver fillets||  ||1,1/2 cups milk|
|     ||1 onion||  ||2 tomatoes|
|     ||1 cup bread crumbs||  ||1 tablespoon fresh chopped parsley|
|     ||1 egg||  ||1/2 teaspoon ground garlic|
|     ||salt and pepper (taste)||  ||3 ripe frying bananas|
|     ||oil (amount necessary)||  |
|Soak liver in milk for 15 minutes.|
At the same time, cook the frying bananas in boiling water for 15 minutes, or until they are tender. Drain water, peel and slice them. Set aside.
Cut onion and tomatoes in fine stripsdd. Heat 2-3 tablespoons of oil in a pan and fry slightly the onion for 2 minutes. Add the tomato, salt and pepper; cook for 1 extra minute and turn the heat off.
Season fillets with salt and pepper and dip them in the beaten eggs. Then cover both sides with bread crumbs.
Heat oil in a pan and fry the fillets. Flip to cook the other side until done.
Serve liver fillets hot, with rice and cooked banana slices.
