Majadito Aguado (Meat and rice dish) | Ingredients: |      | 1 cup rice |   | 1/4 kilo beef |      | 4 cups water |   | 1 large tomato |      | 2 onions |   | 1 handful chives |      | 2 cloves garlic |   | oil (amount necessary) |      | 1-2 teaspoons achiote (or paprika) |   | 3 frying bananas |      | 1/2 cup chivé (toasted yucca flour) |   |

Preparation: |
Cook meat in 4 cups of water until is tender. Remove from pot (do not discard broth), pound the meat and shred it with hands. Measure broth and add more water to reach 4 cups. Cook the rice in broth. Meanwhile chop the onions, chives and garlic. Heat 3 tablespoons oil in a pan and fry this ingredients por 2 minutes. Peel and chop the tomato and add it to pan. Add meat at the same time and fry it slightly (2-3 minutes). Then, transfer the mixture to the pot with the rice. Season with salt, pepper and achiote (or paprika). Mix and remove from heat. Peel and slyce diagonally the frying bananas. Fry them in hot oil. Serve Majadito in bowls, and sprinkle 1 tablespoon chivé (optional). Set fried bananas on the side. |
