 Homemade waffles
     2 cups self rising flour  1/2 cup oil
     2 Eggs  1 3/4 cups milk
     1 tablespoon sugar  1 teaspoon vanilla
     1/2 teaspoon grated lemon peel (optional)  
Homemade waffles
Heat waffle iron. Beat eggs until well mixed and foamy. Add aditional ingredients until creamy and not too thick. Spray or oil the waffle iron and set the temperature at medium heat. pour into waffle iron to cover 3/4 of the mold (we do this to avoid spilling, when we close the waffle iron it will spread to cover the whole mold) Let it cook for about 5 minutes or until the steaming stops. Carefully take it out and serve. It is better to serve hot with butter and syrup of your preference.
For a healthier recipe you can substitute the flour for wholewheat flour and sugar for brown sugar. In case you do not have self rising flour add 1/4 teaspoon of salt and 1 tablespoon of baking powder. You can also garnish it with fruit that is in season.
