 Keperi (Traditional Bolivian dish)
 Ingredients:
     6 Kgr. beef tenderloin  12 large onions
     12 large tomatoes  garlic cloves (to taste)
     black ground pepper  ground cumin
     salt  3 cups rice
     1 kgr. cheese  6 cassavas (yuca)
     1 Ltr. milk  2 cups lemon juice

 Preparation:
Season the beef with salt and abundant lemon juice, and leave it overnight in the refrigerator.
Next day, make superficial cuts on the meat with a knife (small squares). Heat a deep pan with oil and brown the meat both sides. Blend the following ingredients: onions, tomatoes, pepper, cumin, garlic and salt.
Heat the oven at medium temperature. Place the meat in oven dish and pour the sauce on top. Roast the beef for 1,1/2 hours approximately.
Rice with cheese: Wash the rice, bring to boil some of the water, add the milk, cheese and cook on low. Once rice is almost done, add 1 or 2 cups of milk and the cheese (sliced). Cover and cook a few more minutes, stirring occasionally.
Peel the cassava and cut it in thick strips. Fry in abundant hot oil.
Serve a portion of meat with rice and fried cassava.
