| Peruvian ceviche|
|     ||500 gr White fish||  ||1 Onion|
|     ||2 Green peppers||  ||1 gr Red pepper|
|     ||3 Lemons||  ||2 Sour oranges|
|     ||2 ears Corn||  ||250 gr Sweet potato|
|     ||Salt and pepper||  |
|1.- Wash the fish, chop into cubes and place into a strainer. |
2.- Pour 1/2 liter of boiling water on top of the fish; strain well and place fish into a glass bowl.
3.- Peel onion and chop julienne.
4.- Wash peppers and chop julienne. Remove the seeds and add to the fish along with the onion.
5.- Squeeze the lemon juice and orange juice together, mix well, and pour into the bowl with the fish. Place the bowl in the refrigerator for 3 hours.
6.- Remove some of the juice.
7.- Season with salt and pepper and decorate with sweet potato and corn (previously cooked and chopped).
