Peruvian ceviche | Ingredients: |      | 500 gr White fish |   | 1 Onion |      | 2 Green peppers |   | 1 gr Red pepper |      | 3 Lemons |   | 2 Sour oranges |      | 2 ears Corn |   | 250 gr Sweet potato |      | Salt and pepper |   |

Preparation: |
1.- Wash the fish, chop into cubes and place into a strainer. 2.- Pour 1/2 liter of boiling water on top of the fish; strain well and place fish into a glass bowl. 3.- Peel onion and chop julienne. 4.- Wash peppers and chop julienne. Remove the seeds and add to the fish along with the onion. 5.- Squeeze the lemon juice and orange juice together, mix well, and pour into the bowl with the fish. Place the bowl in the refrigerator for 3 hours. 6.- Remove some of the juice. 7.- Season with salt and pepper and decorate with sweet potato and corn (previously cooked and chopped). |
