 Coconut Rice
 Ingredients:
     2 cup rice  1 tsp salt
     1 pig tail (opt)  1 tbl. oil
     1 cup coconut milk  2 cup water
 
 Preparation:
In a small saucepan bring coconut milk, water, and salt to a boil and stir in rice. Reduce heat to moderately low and simmer rice, covered, until most of liquid is absorbed, about 20 minutes. Remove pan from heat and let rice stand, covered, 5 minutes.
 Comments:
The texture of this rice is moist and sticky, so do not expect fluffy individual grains.
