Escabeche | Ingredients: |      | 3 lb chicken parts |   | 5 onions sliced in rounds |      | 1 whole Jalapeño |   | 1/2 carrot sliced |      | 1 tsp salt |   | 1/2 tsp black pepper |      | 1/4 tsp thyme |   | 1/2 tsp oregano |      | 1/4 cup vinegar -vary to taste |   | 2 cloves garlic minced |      | 10 spice seeds |   | water |      | cloves to taste(opt) |   | 1 can Campbell's chicken broth(or bouillon) |

Preparation: |
1. Clean chicken and cut into serving size pieces. Season well with season all. Brown chicken in skillet.
2. Transfer chicken to covered pot and add water to cover plus all the spices and ingredients except onions. Boil chicken until tender, usually about one hour.
3. Add sliced onions to mixture for last 5 min. Or until they are just translucent
Serve in bowls with warm corn tortillas on side. |
