Potato Soup | Ingredients: |      | 6 med potatoes diced |   | 2 med onions diced |      | 1/2 lb bacon |   | 2 carrots diced |      | 2 stalk celery diced |   | 4 cup evaporated milk |      | 1 tsp salt |   | black pepper |      | 4 cubes/tsp chicken bouillon |   | chives |      | 1 tbls parsley |   | 4 cup water |      | 2 tbs butter |   | 1 tsp Basil |      | 2 Bay Leaves |   |

Preparation: |
1. Cook bacon till crisp, then chop
2. Place all ingredients except evap milk and chives in a large covered 8 qt. pan. Cover and bring to boil. Reduce heat and simmer for 4 hours
3. Stir in milk during last 15 min
Serve topped with chives and bacon. |
