Nicaragua bean soup | Ingredients: |      | 350 gr Red beans |   | 2 cloves Garlic |      | 3 Black pepper grains |   | 2 Onions |      | 1 tbsp Butter |   | 4 Eggs |      | 1 Chilli |   | Salt |

Preparation: |
Cover beans with cold water and let them soak for 8 hours. Then, rinse them out and place them in a pot and cover with cold water again. Place the pot on the stove and have the water come to a boil. Once the water starts boiling, drain the water and cover beans once again with cold water. Place on the stove again on low. Peel and chop the garlic and 1 onion and place them in the pot along with the chopped peppers. Cook for one hour. Add pepper grains and chilli; cook for another 15 minutes, adding water if necessary. Heat the butter in a pan and cook the rest of the chopped onion until golden. Mash the beans until a puree is made and add the fried onions. Serve hot. Place the mashed beans in a separate pot and boil. Once the beans start to boil, crack the eggs and leave them until they are poached. |
