 Jenise's Jambalaya
 Ingredients:
     1  Bell Pepper chopped  2 Celery ribs chopped
     1 Onion chopped  2 cloves  garlic
     2 pds  skinless boneless chick breasts  2 T Olive Oil
     1/2 pd Smoked Sausage, sliced  2 cans Stewed Tomatoes
     1 cup Chicken Broth  1 cup brown basmati rice, rinsed
     2 t thyme  1 1/2 t salt
     1/4 t pepper  1/4 t Tabasco Habanero sauce
 
 Preparation:
Wash chicken pat dry and rub with paprika. Heat olive oil in large skillet with lid. Add chicken and brown on all sides. Remove chicken. Add chopped onion, bell pepper, celery and garlic. Saute over low heat till onion is tender, about 10 minutes. Stir in sausage, tomatoes, chicken broth, rice, thyme, salt, pepper and hot sauce. Add chicken, turn to coat. Bring to boil. Reduce heat, cover, simmer 45 minutes. Remove lid continue to simmer 10-15 minutes or until most of liquid has evaporated. Break up chicken with spoon. Serve.
