Ají de fideo (spicy noodles)
Ingredients:
    
1 kilo beef ribs
 
1 pound long noodles
    
24 potatoes
 
4 red dried chilies
    
10 broad beans
 
1 small onion
    
1 small tomato
 
3 tablespoons oil
    
1 garlic
 
salt
    
1 pinch ground cumin
 
Preparation:
Chop onion and tomato. Heat oil in a pot, brown onion and add tomato. Cut the ribs in medium size portions and add to pot. Season to taste. Once the meat is nicely browned, add potatoes, broad beans, and 2 cups of water. Toast slightly the noodles in a pan without oil, and add to pot. Cook on low heat.
Blend chilies with some water, add cumin, the garlic, and a pinch of salt. Pour in a pan, add oil and cook for approximately 1 hour on low heat, adding more water to the sauce. Then, pour the chili sauce on top of meat, and serve hot.
