Brazilian Chicken | Ingredients: |      | 8 chicken thighs |   | 1 large onion |      | 2 garlic cloves |   | 1 green bell pepper |      | 4 tomatoes |   | 4 cubes chicken stock |      | oregano |   | tarragon |      | ground cumin |   | 1/2 cup white wine |      | 1/2 cup water |   | 1 bay leaf |      | 3 tablespoons olive oil |   | salt |

Preparation: |
1. Season chicken thighs with salt and pepper. 2. Place chicken in an oven dish with the onion (coarsely chopped). Peal the tomatoes and pepper; chop and add them to chicken. Crumble chicken stock cubes and add to chicken along with the bay leaf, oregano, tarragon and cumin. 3. Mix the oil with the wine and water. Pour over chicken. 4. Cover with aluminum foil an take to oven at 345°F for approximately an hour. Add chicken broth, or water if necessary. 5. Serve hot. |
