 Moist Rhubarb Coffeecake
 Ingredients:
     2 cups Cake flour  1 tsp Baking powder
     1 tsp Baking soda  1/2 tsp Salt
     1 cup firmly packed Light brown sugar  1 Egg
     1 cup Plain yogurt  1/2 cup Applesauce
     3 cups coarsly chopped Rhubarb  1 tsp Vanilla
     1/3 cup Sugar  1 Tbsp Melted butter
     1 1/2 tsp Cinnamon  Optional Walnuts or pecans
 
 Preparation:
In large bowl sift flour,baking soda,baking powder,and salt.
In a seperate bowl mix the egg and sugar,then add the yogurt,appleasauce and vanilla. Stir into the flour mixture until blended. Add the chopped rhubarb and mix well. Turn it into a 9-inch square pan that is greased or sprayed. Melt the butter add the sugar and cinnamon together and sprinkle on top of mixture. Bake at 350* for 30 - 35 minutes or until the cake test done in the center.
