Baked Beans | Ingredients: |      | 1kg Dried Great Northern Beans |   | 6 tbs Olive oil |      | 3 Large onions, diced |   | 9 Cloves garlic |      | 1kg Bacon, sliced 1cm |   | 2.8 l Passata |      | 3 Bay leaf |   | 3 tsp Thyme |      | 3 tsp Paprika |   | 1 1/2 tsp Ground coriander |      | 2 tsp Salt |   | 2 tsp Ground pepper |      | 200 ml Maple syrup |   |

Preparation: |
1. Preheat oven to 160°C 2. Rinse soaked beans (soaked overnight) then out into a saucepan, cover with cold water and bring to the boil. 3. Strain beans and rinse with cold water. 4. Heat oil in a cast iron pot. 5. Sauté onion, garlic and bacon for 5 minutes. 6. Add beans, passata and remaining herbs to pot. Mix well. 7. Transfer pot, sealed with lid to oven for 6 hours, stirring after 3 hours checking mixture is still sloppy. Add water if dry. 8. After 6 hours, mix through maple syrup. |
