 Cornflake Potato Casserole (Lower Fat)
 Ingredients:
     2 lbs thawed, frozen hashbrowns  1/2 cup melted butter
     1/4 tsp pepper  1 tsp salt
     1/2 cup chopped onions  1 can cream of chicken soup
     2 cups sour cream  2 cups shredded cheddar
     2 cups  cornflakes  1/4 cup melted butter
 
 Preparation:
Mix first 8 ingredients in 9x13 pan. Add to top 2 cups crushed cornflakes and 1/4 cup melted butter. Bake at 350 degrees for 1 hour.

For a breakfast treat add sausages instead of cheese over top of hash brown mixture.
