 Chick peas with Pasta, ( Ciceri e Tria )
 Ingredients:
     120g Mafalda Corta (or other short Ribbon) Pasta  1 tbsn Extra virgin Olive oil
     120g Bacon  1 Large clove of garlic, crushed and finely chopped
     1 x 400g (240g drained weight) Chick peas finely chopped  200ml Chicken stock
     2 tbsn Finely chopped fresh Parsley  to taste Fresh ground Black pepper
     1/4 tspn Fresh ground Nutmeg  
 
 Preparation:

Warm the oil and add the chopped garlic, cook gently until slightly transparent. Now add the bacon and continue to fry gently. Do not allow the bacon to brown.

Add the drained chick peas and turn the heat a little higher, fry for 3 to 4 minutes now allowing the bacon to brown a little but not letting the juices to evaporate too much.
3. Now add 150ml of the chicken stock, turn down the heat and lightly simmer for 2 minutes. Using a potato masher, mash 2/3 rds of the chick peas to pulp, stir all together and add the remaining 50ml of stock.

Put the pasta into a large pan of salted boiling water and cook according to packet instructions (appx 10 minutes for dried and about 3 minutes for fresh).

Meanwhile turn the heat up under the chick pea sauce to a light boil and reduce sauce to a wet paste. remove from heat but keep warm.

When the Pasta is nearly cooked add the nutmeg and parsley to the sauce. drain the pasta and combine with sauce.

Serve and add black pepper to taste.
 Comments:
Based on a very early recipe from Leece and the Salento Peninsula in the Puglia region. In the Original recipe a little (15g) dry broken pasta is fried until very crisp at the last minute and added to provide another texture to the smooth sauce and the light bite of the unmashed chick peas. This quantity will serve a hearty filling meal for one or a good meal for 2 served with a light salad and a few toasted ciabatta croutons.
