Mario Batali's Fettuccine Alfredo
Ingredients:
    
1 pound Fettuccine Pasta
 
8 TBPS Unsalted Butter (cut into 1/8 inch pieces)
    
2 TBPS Olive Oil
 
1/4 cup Parmigiano-Reggiano plus more for garnish
    
salt and freshly ground pepper to taste
 
Grappa white grape wine to taste (optional)
Preparation:
Cook Fettuccine pasta until tender about 2-2 1/2 minutes.
Drain, reserve 1/4 cup of the liquid and place in a large warmed bowl.
Add the butter, the oil, and the parmiggiano and Grappa and toss until
butter and cheese have melted, adding a splash or two of the pasta
water if necessary to loosen the sauce.
Season with salt and pepper to taste, and serve right away.
