 Duck with olives
 Ingredients:
     1 1/2 kg duck  250 g green olives
     2 glasses white wine  1 teaspoon flour
     2 onions  2 carrots
     1 clove garlic  butter to taste
     aromatic herbs to taste  ground black pepper to taste
     salt to taste  
 
 Preparation:
* First preheat the oven to 180ºC.
* Then clean well the duck and empty it if necessary, and let dry.
* Then spread the duck with a knob of butter, salt and pepper and place it in a
baking tray.
* Bake for 1 hour and 15 minutes.
* In a small saucepan aside, melt another knob of butter and saute the onion and
minced garlic, until they are soft.
* Add wine, carrots and herbs.
* Boil and reduce the fire, cooking about 10 minutes.
* Then put it to the blender.
* The next step is put the dish in a shallow tray, and retain it in the oven off,
to keep it warm.
* Then add juice of duck cooking to the sauce and sprinkle flour, without stopping
stirring, until thickens.
* Finally boil the olives a couple of minutes, drain and add to the sauce.
* Pour the sauce over the duck and serve.
