Cinnamon French Toast with Sauteed Apples and Raisins | Ingredients: |      | 1/2 cup Sugar |   | 1-1/2 tsp ground cinnamon |      | 1/4 cup eggs subsitute |   | 1 lg egg |      | 1-1/4 cup milk, Reduced Fat |   | 8 slices Bread, French or White |      | 1/2 cup Golden raisins |   | 2 tbsp margarine |      | 2 Apples, firm and tart, sliced thinly |   | 3 tbsp apple cider |      | 1 tbsp lemon juice, fresh |   | 1 tsp vanilla |

Preparation: |
Mix sugar and cinnamon. Set aside. Whisk eggs substitute, egg, milk, vanilla, and 2 tbsp of cinnamon/sugar mix in a pie plate. Cook raisins in enough boiling water to cover until soft and plump. drain well. Melt margarine in large skillet over medium heat. Saute the apples until golden brown and almost tender. Stir in the raisins, apple cider, and lemon juice. Sprinkle with remaining cinnamon/sugar. Cook until apples are tender. Dip 1 slice of bread at a time into egg mixture coating both sides. Cook on griddle until brown. Serve with raisin/apple mixture. |
