Blueberry Sizzle French Toast Casserole | Ingredients: |      | 1 bag High Fiber Whole Grain Bread |   | 8 Large Eggs |      | 3 C Milk (or Almond Milk) |   | 4 tsp Sugar |      | 3/4 tsp Salt |   | 1 TBSP Vanilla |      | 4 TBSP Butter |   | 5 TBSP Cinnamon Sugar |      | 8 oz (1 1/2 C) Blueberries |   | 1 TBSP Butter |      | 3/4 C Maple Syrup |   | Dash Nutmeg |

Preparation: |
Cut bread into cubes and place cubes into sprayed 9x13 baking pan.
Beat eggs, milk, sugar, salt and vanilla. Pour over bread. Cover/refrigerate, 6-36 hours. Remove from refrigerator and allow to sit about half an hour. Bake 45 minutes uncovered at 350 degrees. Remove from oven; Baste with melted butter. Sprinkle generously with cinnamon sugar. bake 5-10 minutes more.
For topping: In non-stick skillet, cook blueberries in melted butter 3 minutes. Add syrup and nutmeg; bring to a boil. Serve warm over french toast servings. |
