 Blueberry Sizzle French Toast Casserole
 Ingredients:
     1 bag High Fiber Whole Grain Bread  8 Large Eggs
     3 C Milk (or Almond Milk)  4 tsp Sugar
     3/4 tsp Salt  1 TBSP Vanilla
     4 TBSP Butter  5 TBSP Cinnamon Sugar
     8 oz (1 1/2 C) Blueberries   1 TBSP Butter
     3/4 C Maple Syrup  Dash Nutmeg
 
 Preparation:
Cut bread into cubes and place cubes into sprayed 9x13 baking pan.

Beat eggs, milk, sugar, salt and vanilla. Pour over bread. Cover/refrigerate, 6-36 hours. Remove from refrigerator and allow to sit about half an hour. Bake 45 minutes uncovered at 350 degrees. Remove from oven; Baste with melted butter. Sprinkle generously with cinnamon sugar. bake 5-10 minutes more.

For topping:
In non-stick skillet, cook blueberries in melted butter 3 minutes. Add syrup and nutmeg; bring to a boil. Serve warm over french toast servings.
