 Quick Brown Sauce
 Ingredients:
     3 tbs butter  3tbs flour
     1 1/2 cups beef or veg stock  1/2 ts thyme or parsley
     dash pepper  
 
 Preparation:

1. Melt the butter in a heavy saucepan over low heat. Add flour and blend well over medium heat. Reduce heat and simmer for several minutes.

2. Heat stock, stir into the roux (flour and butter mixture) and continue stirring until sauce thickens.

3. Add herbs, reduce heat and simmer for several minutes. Correct seasoning.
