 Ossobuco with vegetables
     1 kg ossobuco  2 cloves garlic
     1 large onion  1 leek
     2 carrots  1 celery
     1 cup broth  1/2 cup white wine
     6 tablespoons fried tomato sauce  3 tablespoons oil
     1 tablespoon flour  ground white pepper to taste
     salt to taste  
1- Peel the onion and chop finely.
2- Peel the leek, wash and cut it into thin slices.
3- Peel the carrots and chop into small pieces.
4- Heat 3 tablespoons of oil in a casserole and saute the onion, garlic, carrot
and leek.
5- Season, add 1 cup of broth and let cook over low heat for 15 minutes.
6- Wash the ossobuco and dry with a clean tea towel.
7- Pass through flour and fry in hot oil on both sides.
8- Add the meat to the casserole with vegetables. Add a little more broth if
9- Cover the casserole and cook over low heat for 75 minutes.
10- When it takes 1 hour cooking, add the tomato sauce and wine and continue
cooking until is very tender.
11- Check the cooking.
12- Remove the pieces of meat, pass the sauce through a conical colander and serve
with steamed assorted vegetable.
