Mussels brochettes with velouté | Ingredients: |      | 16 mussels |   | 1 cup fish broth |      | 2 tablespoons butter |   | 2 tablespoons flour |      | 1/4 cup liquid cream |   | 1 egg |      | grated bread to taste |   | salt to taste |      | ground white pepper to taste |   | olive oil to taste |      | chopped parsley to taste |   |

Preparation: |
* Clean and wash well the mussels and open them in a saucepan on the fire. * Remove from the shells and strain the broth; reserve both. * Melt the butter in a skillet and fry the flour stirring with a wooden spoon. * Add fish broth and mussel broth, little by little, stirring constantly. * Season, cook stirring for 8-10 minutes. * Add the cream, let boil and serve in cups. * Sprinkle with parsley. * Pass the mussels through beaten egg and grated bread. * Fry in abundant hot oil. * Insert the mussels in a skewer and put over the cups of cream. |
