 Caramel Chicken - B+
 Ingredients:
     2 T  Peanut Oil (Or Wok oil)  4 Boneless, skinless Chicken Breasts Cut into small eating pieces
     3 to 6 Small dried hot chillies (or 2 t chili oil)  1/4 C Chopped Shallots
     1T Grated Ginger  1 T Minced Garlic
     1/4 C Brown Sugar  2 T  Water
     2 T Dry Cooking Sherry  1 T Soy Sauce
     2 Small Green Onions Sliced  1 T Fresh Basil Chopped
     1 T Fresh Cilantro Chopped  1/4 C Rice Vinegar
 
 Preparation:
Heat oil over medium high heat in large skillet or wok. Add chicken and cook for 5 minutes or until well browned. Reduce heat to medium and add chiles, shallots, ginger and garlic. Cook for 5 minutes. Remove mixture from wok and keep warm. Stir together brown sugar, vinegar, water, sherry and soy sauce in small bowl and pour into skillet. cook over medium heat for 5 minutes or until sauce has carmalized, stirring occasionally. Stir chicken mixture back into wok and sprinkle with onions, basil and cilantro. Serve over steamed rice or udon noodles.
 Comments:
Add more seasonal vegatables to mix for a more filling meal.
