Leek empanadas
Ingredients:
    
500 g flour
 
1/4 cup milk
    
8 tablespoons olive oil
 
500 g leek
    
200 g carrot
 
100 g celery
    
1 egg
 
salt to taste
    
ground pepper to taste
 
Preparation:
1- Put in a bowl the oil, milk and salt, mix and add flour, mixing little by
little until obtain a dough.
2- Knead a bit until it is compact and smooth.
3- Peel leeks, wash and cut into thin slices.
4- Wash celery and cut into thin strips.
5- Peel the carrots, wash and cut into thin strips.
6- Heat the remaining oil in a skillet and saute the leeks until translucent.
7- Add carrots and celery, season and cook covered over low heat until tender.
8- Remove from heat and let cool.
9- Flour a table with a little flour, form 4 balls and stretch with a rolling pin
(also you can stretch all the dough and then cut the circles).
10- Distribute the vegetable filling in the center of the circles of dough, close
forming the empanada and seal the edges with tines of a fork.
11- Put the empanadas in a baking sheet, brush with beaten egg and bake in oven,
at medium temperature for 20 minutes or until cooked and golden.
12- It can be served with yogurt sauce, tomato, etc.
