 Beef skewers
     400 g beef  150 g peanut
     1 cup water  1/2 cup peanut oil
     1/2 cup oil  2 tablespoons lemon juice
     1 teaspoon coriander seed  1 teaspoon cumin seed
     1 teaspoon ground ginger  8 dried chiles
     6 medium onions  4 canned water chestnuts
     4 cloves garlic  4 leaves lemon balm
     sugar to taste  salt to taste
* Peel and chop finely 4 onions and 2 garlic cloves, mix with all the spices,
pour over the beef pieces and let marinate in a cool place for 1 hour.
* Thread the beef pieces on skewers, grease with oil and fry in a griddle or in a
hot skillet.
* Soak the chiles in water until soften and grate with chestnuts and onions and
remaining garlic.
* Mix all well and saute in peanut oil preheated.
* Add chopped peanuts and lemon juice, stir, pour water, season with salt and
sugar to taste and cook over low heat until the sauce thickens.
* Serve the skewers with the prepared sauce.
