Beef skewers | Ingredients: |      | 400 g beef |   | 150 g peanut |      | 1 cup water |   | 1/2 cup peanut oil |      | 1/2 cup oil |   | 2 tablespoons lemon juice |      | 1 teaspoon coriander seed |   | 1 teaspoon cumin seed |      | 1 teaspoon ground ginger |   | 8 dried chiles |      | 6 medium onions |   | 4 canned water chestnuts |      | 4 cloves garlic |   | 4 leaves lemon balm |      | sugar to taste |   | salt to taste |

Preparation: |
* Peel and chop finely 4 onions and 2 garlic cloves, mix with all the spices, pour over the beef pieces and let marinate in a cool place for 1 hour. * Thread the beef pieces on skewers, grease with oil and fry in a griddle or in a hot skillet. * Soak the chiles in water until soften and grate with chestnuts and onions and remaining garlic. * Mix all well and saute in peanut oil preheated. * Add chopped peanuts and lemon juice, stir, pour water, season with salt and sugar to taste and cook over low heat until the sauce thickens. * Serve the skewers with the prepared sauce. |
