Rabbit in white sauce | Ingredients: |      | 1 1/2 kg rabbit |   | 150 g bacon |      | 1 cup liquid cream |   | 1 cup champagne |      | 1 bay leaf |   | rosemary to taste |      | 2 tablespoons butter |   | salt to taste |      | ground white pepper to taste |   |

Preparation: |
* Cut the rabbit, wash and drain it well. * Melt the butter and brown the pieces of rabbit on all sides. * Put the bacon fillets in the bottom of a earthenware casserole. * Add bay leaf and rosemary. * Add rabbit pieces, salt and pepper. * Stir everything, drizzle with champagne, cook covered over low heat for 45 minutes. * Check the rabbit cooking, add cream and continue cooking for 20 minutes more. * Serve very hot. |
