 Sesame Noodles with Chicken C+
 Ingredients:
     8 OZ  Linguine  1 C Matchstick Carrots
     2/3 C Vegetable Broth  1/2 C Peanut Butter
     2 T Rice Vinegar  2 T Low Sodium Soy Sauce
     1 T Fresh Ground Ginger  2 t Sriracha Hot Sauce
     1 C Thinly Sliced Green Onions  2 T Toasted Sesame Seeds
 
 Preparation:
Cook pasta according to package directions, omitting salt and fat. Add carrots to pasta during the last 3 minutes of cooking. Drain well.
Combine broth and next 5 ingredients (through Sriracha) in a food processor; process until smooth. Combine pasta mixture, chicken, and onions in a large bowl. Drizzle broth mixture over pasta mixture; toss well. Sprinkle with sesame seeds.
 Comments:
The Peanut sauce is very light and fluid, unlike some others I have tried. The sauce has a kick as noted in recipe, used Asian Rice noodles instead and was just as tasty.
