Eggs with peas | Ingredients: |      | 8 eggs |   | 1 kg peas |      | 50 g bacon |   | 50 g Serrano ham |      | 16 small onions |   | 1 teaspoon flour |      | 1/2 cup olive oil for frying |   | 1 sprig parsley |      | 1 sprig thyme |   | salt to taste |

Preparation: |
- Peel the peas. - Peel the onions. - Remove the rind of the bacon and cut into small pieces. - Cut the ham into slices and put together with the bacon in a heavy-bottomed casserole. - Put the casserole in the heat and leave the bacon release their fat, add the onions and fry over low heat until they begin to brown. - Add the flour, correct the seasoning if necessary, and stir. - Add the peas and stir well. - Make a bouquet with parsley and thyme and put in the casserole; cover and let simmer for 20 minutes. - If necessary, add a splash of hot water. - Heat abundant oil in a small and deep skillet and when it begins to smoke, fry the eggs one by one, season and place in a recipient with the peas. - Serve immediately. |
