 Bread, Banana Bread (best)
     1 1/2 cups wheat flour  2 cups quick oats
     3 1/2 cups sugar substitute  1/4 teaspoon salt
     2 teaspoon baking soda  1 teaspoon baking powder
     3 Tablespoons psyllium husk (optional)  -- --
     1/2 cup apple sauce  1 cup egg substitute (4 eggs)
     1/2 cup apple sauce  1/3 cup skim milk
     2 Tablespoons lemon juice  2 Tablespoons molasses
     4 Tablespoons Canola oil  6 Tablespoons Sour Cream 0% fat
     5 Tablespoons plain yogurt 0% fat regular or greek type  2 1/2 cups bananas ~5 medium
     1 1/2 Cups Walnuts (optional but preferable)  1 teaspoon banana extract (optional to enhance taste)

Line two 8--in. x 4-in. loaf pans with foil and coat with cooking spray
line 1 large cookie tray with foil and coat with cooking spray to make bars fill cookie tray to almost over filling; you will have some left over, enough to fill a pie tin, coat with cooking spray

In a very large bowl, combine the dry ingredients. Flour, Oats, sugar, salt, baking soda, baking powder, and psyllium husk. Mix well.

preheat oven to 360 degrees F

In a large bowl add apple sauce, eggs, milk, oil, lemon juice, Molasses and oil. Mix well.

Add sour cream, yogurt and bananas to food processor pulse until mashed; start with 5 medium bananas this will make about 3 cups; add additional bananna if needed. Do not over process, you want this thick. Pour into the large bowl (wet ingredients) bowl. Optional add banana extract for additional taste. Mix well.

Pour the wet ingredients (large bowl) into the very bowl with the dry ingredients. Mix well.
Fold in walnuts now (optional)
Pour into the prepared loaf pans or trays.
Bake at 360 degrees F for 50-60 minutes or until a toothpick inserted near the center comes out clean.
50-55 min for bars, 55-60 min for loafs
Optional: pour some agave nectar or sugar free maple syrup into a small bow, sprinkle cinamon on top and mix.
With a few minutes left too cook ~10, use a small spoon or brush and lightly coat the top of each loaf.
Finish Baking.
Cool for at least 10 minutes.
