 Tongue with Madeira sauce
 Ingredients:
     1 1/2 kg cow tongue  1 onion
     100 g carrot  100 g tomato
     1/2 cup Madeira wine  5 black peppercorns
     2 tablespoons flour  2 tablespoons butter
     salt to taste  1 bay leaf
     1 sprig thyme  
 
 Preparation:
1- Wash the tongue and place in a pressure cooker.
2- Peel the onion and cut into rings.
3- Peel the carrots and chop into chunks.
4- Wash and chop the tomato. Add the onion, carrots, herbs, salt and peppercorns
to the pressure cooker.
5- Add 1,1/2 cups of water, cover the pot and cook 30 minutes, counting from the
pressure to reach.
6- When the cooker miss the pressure, open, remove the tongue and remove the skin.
7- Cut the tongue in slices and place in another pot. Pass the sauce through a
conical strainer.
8- Melt the butter in a small saucepan and sauté the flour stirring with a wooden
spoon.
9- Add the wine and when is integrated, add to the sauce.
10- Once it begin to boil, pour over the tongue bring to a boil and serve.
