Roast veal with pepper | Ingredients: |      | 1 1/2 kg cow's tail of rump |   | 300 g green beans |      | 1 large onion |   | 1/2 glass olive oil |      | ground black pepper to taste |   | salt to taste |

Preparation: |
1- Tie the tail and spread the pepper over. 2- Heat 2 tablespoons oil in a skillet and brown meat on all sides. Remove and reserve. 3- Cut the onion into rings and place in a baking dish. 4- Place over the tail, drizzle with oil and roast in preheated oven at 220°C for 30 minutes. 5- Basting ocasionally with cooking juices. 6- Cut green beans in julienne and cook in boiling salted water 12 to 15 minutes. 7- Then refresh with cold water and drain. 8- Heat the remaining oil and saute for 2 minutes. 9- Remove the tail from oven and set aside from the recipient. 10- Pass the cooking juices through the food mill and season if necessary. 11- Cut the meat into steaks and serve with green beans. 12- Bring the sauce separately in a sauce boat. |
