 Mondongo colombiano (Colombian tripe soup)
     500 g cooked tripe (cow's rumen)  500 g pig's foot
     250 g pork  2 sausages
     3 potatoes  250 g cassava
     1 onion  1 tomato
     1 tablespoon chopped coriander  cumin to taste
     ground pepper to taste  1 strand saffron
     salt to taste  
- Chop the tripe, foot and pork meat, and sausages.
- Put all the meat in chunks in a large pot, and cook for 3 hours (in pressure
cooker 45 minutes).
- Meanwhile, chop the onion and tomato and make a sauteed with both things.
- Add to the pot the potatoes, peeled cassava in chunks, the sauteed, coriander,
saffron, cumin, salt and pepper to taste.
- Cover and cook for 30 minutes more, until everything is tender.
- Adjust the seasoning and serve with rice and patacones (fried green plantains).
