Mocha cake
Ingredients:
    
200 g flour
 
100 g butter
    
1 tablespoon brown sugar
 
a pinch salt
    
1 tablespoon soluble coffee
 
200 g chocolate fondant
    
5 eggs
 
1 tablespoon brandy
    
120 g sugar
 
chocolate curls to taste
    
1 cup whipped cream
 
Preparation:
1. Put the flour with a pinch of salt in a desk in a volcano shape and add 1
tablespoon water, brown sugar, chopped butter and salt.
2. Knead with fingers until dough is smooth.
3. Make a ball, wrap in plastic wrap and let stand in cool place for 30 minutes.
4. Spread with a roller.
5. Grease a baking pan of 18-20 cm with butter and wrap it with the mass.
6. Prick the entire surface with a fork and reserve.
7. Mix in saucepan 1/3 cup water and coffee, chocolate crumbs and beaten egg yolks.
8. Put the pan in a water bath and cook, stirring, until it forms a cream.
9. Add the brandy and remove from heat and let cool.
10. Beat the egg whites until stiff with the sugar and mix thoroughly with mocha
cream.
11. Pour 3/4 of the cream prepared in the pan with the dough and place in the
preheated oven at medium temperature, about 30 minutes.
12. Remove from oven and cool.
13. Finally, finish filling with reserved cream, cover with whipped cream and
garnish with chocolate curls.
