 Bountiful Beef Stew
 Ingredients:
     1 tbsp olive oil  1 lb  bottom round steak, trimmed cut into 1 inch pieces
     1/2 tsp salt  1/4 tsp pepper
     3  onions, thinly sliced  1 1/2 lb baby red potatoes, halved
     1 1/2 cups baby cut carrots  14 1/2 oz reduced sodium beef broth
     2 tsp  finely chopped tarragon  1/3 cup water
     2 tbsp flour  
 
 Preparation:
Heat oil in nonstick skillet over medium-high heat. Add the beef and sprinkle with salt and pepper. Cook, turning frequently, until browned, about 4 minutes. Transfer the beef to a slow cooker.
Add onions to the skillet. Reduce heat to medium; cook, stirring occasionally, tunil softened and browned, about 8 minutes. Transfer the onions to the slow coker and stir in the potatoe, carrots, broth, and tarragon. Push the potatoes down into the liquid. Cover and cook until beef and vegetables are fork tender, 4-6 hours on high, 8-10 hours on low.
About 20 minutes beofre the cooking time is up, whick together the water and flour in a small bowl until smooth. Whick in 1/4 cup of the stew liquid until blended; stir the flour mixture into the stew. Cover and cook on high until the mixture simmers and thickens, about 15 minutes longer.
