 Banana Bread - Vegan
 Ingredients:
     3 large over-ripe bananas (mushed)  2 tbsp lemon juice
     1/3 cup apple sauce  1/2 cup maple syrup (or agave nectar)
     2 cups whole wheat flour  3/4 tsp baking powder
     3/4 tsp baking soda  1/2 tsp  salt
 
 Preparation:
Preheat oven at 350F and coat a 9x5 loaf pan with oil.

Add lemon juice to bananas. Add apple sauce and maple syrup. Stir well. In seperate bowl combine dry ingredients. Add to wet, mixing well.

Bake for about 50 to 60 minutes.
 Comments:
Add any chocolate chips, blueberries or nuts
