Scallopini with cream | Ingredients: |      | 500 g veal steak |   | 1 cup liquid cream |      | 2 tablespoons butter |   | 1 medium onion |      | 1 egg |   | 1/2 cup white wine |      | 1 tablespoon mustard |   | 3 tablespoons flour |      | salt to taste |   | white ground pepper to taste |

Preparation: |
- Flatten fillets a bit, cut in half and lightly floured. - Beat the egg in a bowl, pass the steak and fry in melted butter over low heat to prevent burning. - Place in a saucepan and reserve. - Peel the onion, chop very fine and sauté in the same fat fillets until translucent. - Add the mustard and wine and let evaporate a bit. - Pass the sauce through a food mill and pour over meat. - Add salt and pepper, drizzle with cream, cover and cook for 10 minutes. - Serve hot with mashed potatoes or to taste. |
