 Orange crêpes
 Ingredients:
     2 eggs  200 cl milk
     100 g flour  1/2 tablespoon oil
     1 pinch salt  100 g butter
     100 g sugar  1/2 tablespoon curaçao (liqueur)
     1 orange  1/2 cup natural orange juice
     1/2 cup cognac  
 
 Preparation:
- Place the flour and milk in a bowl of the mixer and whip until smooth cream.
- Add eggs, oil, a pinch of salt and mix everything again.
- Let stand about 30 minutes.
- Coat the bottom of a medium skillet with a layer of butter, bring the fire and when melted, add a tablespoon of the mixture and spread.
- Turn when golden and continue until the end of the dough.
- The crêpes should be very thin.
- Wash the orange, dry and grate a quarter of the skin, squeeze and reserve.
- Whisk the remaining butter with 80 grams of sugar until have a smooth cream.
- Incorporate half of the orange juice, orange zest and curaçao.
- Fill the crêpes with the cream and fold into four.
- Arrange them in serving dish.
- Sprinkle with remaining sugar and drizzle with hot brandy, set the fire and serve immediately.
