Tenderloin with blue cheese (microwave) | Ingredients: |      | 1 kg veal tenderloin |   | 100 g Roquefort cheese |      | 2 tablespoons cream |   | 1 tablespoon cognac |      | 1 tablespoon Dijon mustard |   | 1 teaspoon oregano |      | 1 bunch parsley |   | 1 young onion |      | ground pepper to taste |   | coarse salt to taste |

Preparation: |
- Clean the tenderloin in plenty of water and drain. - Once dry, cut it, making a hole through the center. - We took (out) salt, pepper and a little oregano. Reserve. - Peel and chop the onion and parsley. - Put in a bowl with blue cheese, brandy, mustard and cream, mix well. - Fill the hole left in the fillet with the mixture. - Close the ends with wooden toothpicks. - Put the tenderloin in the microwave oven bottom and roast for 30 minutes at 180 watts, turning round in the half of the time. - When ready, lightly browned on the grill. - Let stand five minutes before serving. |
