 Duck with cherry sauce
 Ingredients:
     1 1/4 kilo duck  1 tablespoon butter
     1 orange  1/3 cup orange juice
     250 g pitted cherries  2 tablespoons brandy
     3 tablespoons red jelly  1 tablespoon cornstarch
     salt to taste  ground pepper to taste
 
 Preparation:
1- Wash the duck inside and out, pat dry with paper towels.
2- Peel oranges removing white skin and place it in the duck, season, spread it with
butter and place in an ovenproof dish.
3- Cover with aluminum foil and put into the oven, preheated to 180°C, 1 hour.
4- Turn over halfway through cooking and remove the foil.
5- Meanwhile, heat a frying pan and add the orange juice, cherries, brandy and
jelly.
6- Cook up a few minutes, add cornstarch dissolved in 1 tablespoon water and mix
well, cooking it a few minutes without stopping to stir.
7- Finally, five minutes before end of cooking duck, cover with sauce.
8- Remove from oven and serve with chips or rice.
