 Oatmeal Coconut Cookies
     225 g/8 oz Butter or Margarine  125 g/4 oz Soft light Brown Sugar
     125 g/4 oz Caster Sugar  1 large Egg
     1 tsp Vanilla Essence  225 g/8 oz  Plain Flour
     1 tsp Baking Powder  1/2 tsp Bicarbonate of Soda
     125 g/4 oz Rolled Oats  75 g/3 oz Dessicated Coconut
Preheat the oven to 180 C/350 F/Gas Mark 4, 10 minutes before baking. Lightly oil a baking sheet.

Cream together the butter or margarine and sugars until light and fluffy. Gradually stir in the egg and vanilla essence and beat until well blended.

Sift together the flour, baking powder and bicarbonate of soda in another bowl. Add to the butter and sugar mixture and beat together until smooth. Fold in the rolled oats and coconut with a metal spoon or rubber spatula.

Roll heaped teaspoonsfuls of the mixture into balls and place on the baking sheet about 5 cm/2 inches apart and flatten each ball slightly with the heel of the hand.

Transfer to the preheated oven and bake for 12-15 minutes. until just golden.

Remove from the oven and transfer the biscuits to wire rack to cool completely before serving.
